3 Tasty Spring Recipes

Dear readers,

Here we are, back with our tasty column and ready to blow your mind with three delicious recipes from Catalonia, perfect for this Spring/Summer season.

This sunny, hot weather makes us want to go out, enjoy the city, have picnics by the beach, or to host a cool dinner in a shared flat with all our friends and international flatmates! And we wonder if this is what many of you are going to do as well!
Therefore, we are about to provide you with some tasty recipes to impress your guests in a super easy way!

Get ready and fasten your apron!

1) Empedrat

Empedrat is one of the most famous summerish dishes in Catalonia, basically a super fresh salad made of beans and cod, mixed with some olives, tomato in pieces, spicy onion and everything topped with some white wine vinegar.

INGREDIENTS - Recipe for 4 people

  • 400 g cooked beans
  • 300 g cod
  • 1 chopped green pepper
  • 1 chopped red pepper
  • 80 g olives without pit
  • 1 chopped onion
  • 2 teaspoon of olive oil
  • 2 teaspoon of white wine vinegar

PREPARATION

  1. Peel the cod
  2. Put the cod in a bowl with water and then in the fridge for 24 hours
  3. Change the water every 6 hours
  4. Crumble the cud
  5. Mix the beans and the veggies
  6. Dress with salt, olive oil and vinegar
  7. Preserve in the fridge for 45-60 minutes before serving it
  8. TASTE!

Note - If you feel it like a waste of time, you can also buy the unsalted cud in a supermarket.

 

2) Gazpacho

This freshy veggie soup is a typical dish from Andalusia, but we love it so much here in Barcelona...it can be a healthy alternative to all the tapas that you can find in Barcelona!

INGREDIENTS - Recipe for 4 people

  • 4 big tomatoes
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • 1 cucumber
  • 1 little piece of garlic
  • 2 teaspoons of vinegar
  • ¼ glass of olive oil
  • 1 teaspoon of lemon juice
  • salt
  • 2 glasses of water
  • ¼ glass of bread pieces

PREPARATION

  1. Liquefy all the vegetables
  2. Add vinegar, olive oil, lemon juice and bread
  3. Salt to taste
  4. In order to have a strong flavour, put the soup in the fridge for one night

 

3) Sorbete de limón al cava

This is lemon sorbet is usually served as a dessert, or while waiting for the next course (in formal restaurant). It’s a mix of lemon sorbet and Catalan sparkling wine, a perfect combination between ice cream and a drink.

INGREDIENTS

  • ½ liter of lemon sorbet
  • ¼ liter of cold Cava sparkling wine
  • fresh mint
  • ½ lemon in slices

PREPARATION

  1. Mix Cava with the sorbet until you have a smooth cream
  2. Serve in a champagne glass and decor it with a slice of lemon and some mint leaves
